Full Job Description

An Executive Chef oversees the daily operations of restaurant and hotel kitchens. This may include hiring, training and overseeing kitchen staff, and ensuring a high-quality, cost-effective product. Top candidates are creative, service-oriented and level-headed.

Duties and Responsibilities

Direct oversight of day-to-day kitchen operations, organize and supervise, including executing companywide shared standards and striving for a genuine guest experience and guest satisfaction.

Work in tandem with General Manager to coordinate and facilitate a smooth, efficient, and speedy flow of service with good communication between front and back of house.

Initiate improvements and build relationships with guests to obtain feedback on quality of food. Resolve guest complaints or dissatisfaction in a friendly and timely manner.

Review and comprehending budgets, operating statements and cost savings initiatives as needed to assist in the financial management of department. Maintain labor under control by scheduling according to forecast and adjust as needed throughout the shift.

Collaborates with Executive Team on financial analysis using direct control of Profit & Loss, strategic, forecast, cost savings initiatives, budgets, and general financial controls.

Supervise all opening, mid shift and closing procedures, including but not limited to, checklist, check ins and check outs and ensure management team is following through in journal and staffing log entries.

Accomplish restaurant, kitchen, human resource, and corporate objectives by communicating job expectations, planning, monitoring, appraising, and reviewing job contributions of management staff by provide coaching, counseling and corrective action as needed.

Responsible for ensuring department is staffed accordingly, including posting schedules in a timely manner and recruiting, selecting, orienting, and training new hires.

Supervise all BOH staff and ensure all staff are trained properly and meet service standards, grooming standards, food preparation and culinary activities while assisting staff to execute service standards during peak hours. Praise staff performance and provide continuous feedback to improve productivity and performance.

Complete opening, mid shift, or closing procedures ensuring all staff checks in and out and provide a brief overview of the shift operations in manager’s log, including any relevant staffing.

Oversee order of supplies to stack inventory appropriately and maintain a sufficient supply of

items needed staff. Maintain a good relationship with vendors and ensure quality, quantity and

timeliness is achieved in each order.

Maintain kitchen equipment in good condition and arrange for purchases and repairs as needed. I understand this is not an exhausted list of all my duties as I may be asked to help with other initiatives.
